The best quality molasses is organic, dark, unsulphurised sugar cane molasses, also called blackstrap molasses. It is recommended for daily use in soups, desserts and sweet cakes. Whenever possible, sugar should be substituted with molasses and honey or other natural sweeteners.
Molasses syrup is rich in iron, calcium, selenium, copper, manganese, magnesium, potassium and sodium. One teaspoon of molasses has three times more iron than an egg, and more calcium than a glass of milk. It is also rich in B-group vitamins.
