The Jerusalem artichoke, or Jerusalem artichoke or Jerusalem artichoke, looks a bit like a sunflower – it has strong upright stems several metres high and yellow flowers. It forms subterranean clumps on which irregular yellow, red or purple-skinned tubers develop. The latter are high in inulin, which is why Jerusalem artichokes are a valued substitute for potatoes among diabetics. In addition to the above, the vegetable contains significant amounts of potassium and iron, as well as many other minerals and trace elements essential for the human body.
