Uses and storage of coriander
Coriander seeds are the main herb used in our food culture, while parsley leaves are the preferred herb. When using fresh coriander, it is important to bear in mind that its flavour and aroma are many times stronger and more persistent than parsley. It is not advisable to dry the coriander leaves, as this would remove all the exotic flavour, but they can be blanched, i.e. heat-soaked, and then frozen in an ice cube tray.

Coriander is said to have been used for preserving meat as far back as Roman times. Scientists have now identified the reason for this: coriander has been found to inhibit the activity of harmful micro-organisms and to contain an antioxidant that prevents fat from rancidity.
