Processing
We process the harvested blossoms in a similar way to black garlic, fermenting the blossoms for about 2 weeks in a baking oven. Temperature is the catalyst for fermentation, no additives are added.
The result is an even more nuanced bouquet of flavours than black garlic, containing sour, sweet and umami nuances and spreading a wonderful and appetising aroma.
How to consume?
The Black Garlic Flower is great to nibble on and a good accompaniment to wine or beer. Black garlic flower is excellent for adding to salads and other dishes, both sweet and savoury, to flavour them. Combining black garlic flowers with dairy products, including ice cream, brings out particularly interesting flavour sensations.
