Quinoa ( quinoa) is one of the oldest cultivated plants of mankind. Quinoa was cultivated in South America as early as 6 thousand years ago. It was one of the main staples of the indigenous diet, along with potatoes and maize.

For the Incas, quinoa was a sacred plant, known as the ‘mother of seeds’. It was also called ‘Aztec gold’ for its strength and durability.

Quinoa is a good addition to our diet and offers an alternative to cereals in a gluten-free diet. Considered an easily digestible food, kinoas are also suitable for young children.

It is worth highlighting the fact that quinoa is high in protein and lysine. Compared to most cereals, quinoa is significantly higher in protein. It contains all 8 amino acids, which is very rare in the plant world. These amino acids are more valuable and better balanced, in particular due to their high lysine, methionine and cysteine content.

Quinoa is an excellent source of magnesium, iron and calcium (magnesium to calcium ratio 3:1). It also contains copper, zinc and phosphorus, as well as good levels of vitamins B2 and E. It is a good source of iron, zinc and phosphorus.

The glycaemic load of quinoa is low, which means that foods made from quinoa will keep you feeling full for a long time. It is an alkaline food, which means that it helps to maintain the alkaline-acid balance necessary for the body’s health.

Quinoa is an excellent substitute for rice, couscous and pasta. Quinoa can be used to cook porridge, and quinoa seeds can be added to soups, salads, casseroles and vegetable dishes. It can be served as a breakfast porridge with nuts, fruit and honey.
