Description

Raisins have long been known as a sweet, nourishing and energising snack. The secret of raisins’ energetic richness lies in their high content of grape sugar, or glucose. Raisins also lack fat-soluble vitamins. Raisins, or dried grapes, were first produced by the Egyptians and Persians. The best raisins are obtained by drying large, thin-skinned grapes. Drying evaporates the water and increases the sugar content per weight of the berries.

Most raisins are produced in Turkey, Greece, Cyprus, Spain, Iran, but also in the USA. The raisins are mainly dried in driers. According to the different grape varieties, raisins can be light yellow to blackish in colour, with or without seeds. The addition of sulphuric acid in the drying process lightens the raisins and improves their keeping quality.

Raisins are an important source of potassium. Potassium deficiency is indicated by apathy, drowsiness, loss of appetite, slow heart rate, arrhythmia and increased blood pressure. Their potassium content makes them suitable for heart patients. The magnesium in raisins increases our resistance to infections, helps prevent atherosclerosis, reduces nervous excitability and lowers blood pressure. Raisins are used in a wide range of desserts, pastries and compotes, but are also suitable as a snack.
