Cinnamomum verum, or Ceylon cinnamon, is considered to be the true cinnamon. However, most of the cinnamon on the market is made from cheaper varieties of other cinnamon trees and is also called cassia to distinguish it from true cinnamon.

Ceylon cinnamon is produced using only the thin inner bark of the tree, giving it a lighter brown colour, a thinner and more delicate texture, and a more aromatic and mild flavour than cassia. Cassia uses the whole bark of the tree, has a stronger flavour, a woody texture and a reddish-brown colour. The essential oil of cinnamon contains the poisonous coumarin, which can be harmful to the liver and kidneys if used in large quantities. Ceylon cinnamon has a significantly lower coumarin content than cassia bark. However, cinnamon would have to be eaten in wild quantities for coumarin to be harmful to health.
